Roasted butternut squash, rocket and cherry salad
This recipe is a little Americanised so to translate, you’ll need butternut squash (easier to find than pumpkin), rocket (A.K.A arugula), fresh cherries (instead of dried. Add fresh cherries in to roast alongside the butternut squash about half way through the cooking time), and honey will work just as well as maple syrup. The oven will need to be 230 degrees celsius. Chocolate cherry pistachio bark
Swap out the milk chocolate for dark chocolate and the salt for grated orange or lemon peel and this recipe becomes a powerhouse of antioxidants and vitamins and minerals (when eaten in moderation of course).
